Buy heavy-bottomed pots and pans that distribute heat evenly. Use stainless stell, enamel, anodized aluminium and non-stick pans that don't react to acidic food.s
 
Get a proressional set of knives. High quality knives are usually made from high carbon stainless steel or have laminated blades that use a combination of different steel alloys.
 
The handles on your pots should be heatproof. Handles should ideally be weleded in several spots. Such handles are preferable to rivted ones because dirt collects around a rivet. All lids should fit tightly to keep in moisture. The lid should have a heatproof handle too.
